Cornbread Chili Pie

One of my personal favorites has always been chili.  This is a quick and easy recipe to spice up your chili, weather it comes in a can or you make it yourself.

Ingredients: (You will need to make my Cornbread Batter first)

1 1/2 cups Cornbread Batter (Put the remainder in a 9x13 pan as in the cornbread recipe.)
4-6 cups Your favorite chili (2-3 15oz cans)



Yield: 8 servings
Preparation Time: 25-30 min
Cook Time: 30-40 min


Items you will need:
9-in pie pan (preferably glass or ceramic)


Directions:
Begin preheating your oven to 400 degrees F.

1.  Place your chili into the pie pan and spread evenly.  (I used Cattle Drive Gold Chili, it has a bit of a kick)



2.  Pour the Cornbread Batter over the chili in long strips to cover the chili as much as possible without touching it.




Still haven't smoothed with the spoon, only poured from the bowl.


3.  Spread the batter to the edges and cover any holes you can.  The less you touch the batter the better, you don't want to mix it with the chili on accident.



4.  Bake at 400 degrees F for 20 minutes.

5.  Pull out the baking tray and cut a large slit in the center of the pie to allow steam venting for the chili. (If you don't do this you will have some uncooked batter in the center of the pie below the crust.  It's not horrible, just a bit unappetizing.)




6.  Continue baking for another 15-20 mins until dark golden, and a toothpick comes out clean of batter.  (I had to leave to an appointment so I didn't get to take a finished photo, but cook it until darker than the photo above.)

7.  Spoon out desired amount and serve hot with a square of cornbread.  ENJOY!

Tip for this recipe:
You can bake both the Cornbread and the Pie at the same time, just make sure that you stagger them in the oven so that they get proper heat coverage.  If you don't stager them, they won't brown properly.  Remember that the bread will only cook for up to 27 min, the pie can take up to 40 min.  Don't burn your bread!
