Ingredients:
6 Eggs
2-3 cups Cubed Potatoes
2 cups Grated Cheddar Cheese
1-2 Tbsp Olive Oil
1 Full Kielbasa or 16 oz Tube Regular Raw Breakfast Sausage.

Yield:   7-9 servings
Preparation Time:  30-40 min (Depends on Kielbasa or Raw Sausage.)
Cook Time: Included Above.

Items you will need:
Electric Griddle,  Electric Skillet, or Large Skillet/Frying Pan.
Plastic Turner
Seasoned Salt

Directions:

1.  Slice your entire kielbasa in half lengthwise first, then into 1/4" slices.  (For raw sausage, brown and crumble entire tube.)

2.  Place your slices flat side down and cook until browned.  Set aside for later.

3.  Put 2 Tbsp of Olive Oil on your griddle and let heat until just barely starting to smoke.  Add cubed potatoes and fry until browned.  (I always add a little seasoned salt during the cooking of the potatoes.)  Set aside for later.

4.  Scramble 6 eggs.

*Tip/Trick*  Best way to break eggs without getting shell in them.  Filmed by my daughter Ellie (5), background noise by Jarom (2) and Evelyn (1).

5.  Put the Sausage and Potatoes back onto the griddle.  Mix well and heat until everything is good and hot again.

6.  Sprinkle Cheddar Cheese over the breakfast mixture and let melt for 1-2 min.

Just added Cheese.

After melted for 1-2 min.

7.  Serve and Enjoy!!

We prefer to pour some maple syrup over ours for an extra treat.  I also like to add some Tony Chachere's Creole Seasoning 8 oz to mine along with the maple syrup, it is my favorite seasoning.

I know... I used a plate for the photo.  (This is 2-3 servings)
